Shavings? Wines “artificially” aged with wood chips in place of the traditional oak barrel

For institutions and premium producers, the path taken at the European level extends in the opposite direction from the primary objective of the quality and image of our wines. At least safeguard transparency.
The idea was scotched by the Chianti Classico Wine Consortium with a single word, “no,” and certainly not for the great DOC and DOCG wines, for which quality, image and terroir must be safeguarded.
